Drugstore Rockstars

Green Chile and Cheese Chicken Enchiladas

As a Texan living in Utah, I am always looking for a good Texmex recipe that reminds me of home. When I found this recipe I knew I had to try it! Truly the best green chile enchilada recipe I have had!

adapted from A Bountiful Kitchen

3 cups cooked, chopped chicken
1 (4 oz) can of green chilies, lightly drained
1 package (8 oz.) cream cheese, cubed
1 can black beans, rinsed and drained

2 tablespoons butter
1/2 cup chopped onion
2 tablespoons flour
3/4 cup chicken broth
1/4 cup milk
1/2 teaspoon salt
1/4 teaspoon pepper
1 can (7 oz) green chili enchilada sauce
1/2 cup regular sour cream 

8-10 oz (about 2-3 cups) Monterey Jack Cheese
8 medium (soft taco size) flour tortillas
chopped fresh cilantro, tomatoes for garnish

Preheat oven to 375 degrees.

In a medium bowl, combine the softened cream cheese and green chilies. Mix well and add the chicken and black beans. Mix to combine and set aside.

In a large nonstick skillet, melt the butter over medium heat. Add the onion and stir occasionally, until the onion softens and starts to turn clear, about 3-4 minutes. Sprinkle the flour over the mixture and stir well. Cook for 1 minute, stirring. Slowly whisk in the broth and milk. As you whisk and the mixture cooks, the mixture will become smooth. Cook over medium heat  until the mixture is bubbling and has thickened, about 4-5 minutes. Remove the skillet from the heat, and then mix in the enchilada sauce and sour cream.

Lightly grease a 9x13 inch baking dish. Spread about 1/4 cup of the sauce on the bottom of the dish. Fill each tortilla with about 1/2 cup of the chicken/cream cheese filling. Top with a small amount of shredded cheese. Save at least 1/2 of the bag for the top of the enchiladas. Roll the tortillas up and place seam side down in the baking dish. Continue filling enchiladas until the dish is full.

Pour the sauce over the top of the enchiladas. Top with the remaining cheese. Bake for 20-30 minutes until the enchiladas are bubbling, hot, and lightly browned. Top with cilantro just before serving!

So the weather in Utah has decided that it's winter again...which means that I'm desperately dreaming of my upcoming Hawaii vacay. I've been scouring the web for things to take on my trip. I bought Raybans this month during Bloomingdale's 25% Friends and Family Deal and I'm hoping that I can find the Tory Burch sandals and a new swimsuit on sale next month. My friend recently recommended The Girl on the Train as a must read so I'm excited to take it on the trip with me. Memorial Day hurry up!

Welcome to the Jungle Baby Reece!!!

It's A Jungle Out There!!

I had the opportunity to cohost a baby shower with the other YW leaders for our cute friend Steffanie Reece. She is due with a baby boy at any time! We chose to do a jungle theme and it turned out so cute considering we had about a week to put it together! It was so much fun to work on the shower with women who have become my close friends, and Steff was able to get so many cute things for her little boy! It was my first boy shower to put together and it turned out just as fun as doing one for a little girl! We can't wait to meet your little babe Steff!

Diorshow Maximizer Lash Plumping Serum: This mascara primer has been life changing. I know some people hate the thought of adding one more step to their routine, but using this primer I've been able to eliminate curling my eyelashes (so technically its the same number of steps in my routine using it). It makes my eyelashes look so long, thick, and perfectly curled. This has been one of my best beauty discoveries.

Target Sandals: Target has done it again. Everytime I go into the store I find at least two pairs of sandals I want. I scored these sandals for 20% off two weeks ago and I'm in love. The cuteness cannot be beat for Target's prices.

Target Outdoor Dishes: Spring and summer make me think of bbqs..and bbqs make me want colorful dishware. I found these plates during my last trip and scooped them up. They are so cute!

Shock Tart Lipgloss: This is currently my favorite lipgloss. It's the most perfect pink in existence and looks good layered on top of lipstick or worn by itself. I like it better than any of my YSL or MAC purchases I have made lately.

Eau So Sexy: I discovered this perfume last Saturday and I am hooked. It smells so good and is definitely my favorite scent right now. I bought the body spray version with my Reward Card and I can't wait to go back and buy the actual perfume.

This Haircut: I'm thinking hard about taking the plunge and cutting my hair short again. I found this picture on Pinterest and it's really making me want to try it. My hair is so long right now and is always in the way! I need to find faster ways to get ready in the morning and I think shorter hair would definitely help...
